Moving away from Cocoapod for dependencies #65
Description
Cocoapods is to become read-only at the start of 2026, see https://blog.cocoapods.org/. That means there will be no new versions published on Cocoapods from the Couchbase Lite team, and others, by mid 2026.
Other ways of handling dependencies should be explored in order to be able to keep this project up to date in the upcoming year.
