Update to jupyter-book v2 for documentation #1173
Description
As discussed in #1172, dependabot suggested updating the version of jupyter-book from 1 to 2 #1167 . While this does appear desirable, we need to wait until MyST support automated API documentation. I'm creating this issue to log the change and keep an eye on updates to MyST that might enable us to move to Jupyter Book 2: jupyter-book/mystmd#1259
