Where are the 1.21.x versions on the Github?

What the title says, the Github is super far behind where the datapack is on Modrinth.

If you're talking about version releases: I am no longer uploading zip files to the Github Releases tab. It was necessary when PMC and our Website were outdated and I didn't have access, but since I got access to our website and we started uploading the datapacks to Modrinth... Github releases didn't server a purpose anymore.

If you're talking about the actual code: Yeah, I'm also aware of this, and do intend on fixing that. Short answer, my old workflow for updating everything broke, so I have been doing things manually since then. Manually updating the public Github is a pain, and have not had time to fix it.
