Support multiple documentation renderers beyond Stoplight Elements. Users should be able to choose their preferred UI.

Scope:

• DocsRenderer interface with a method to produce the HTML page
• Built-in renderers for Stoplight Elements (current), Scalar, and Swagger UI
• WithDocsRenderer(r) option for ServeDocs
