Composer home should be configurable

Right now COMPOSER_HOME directory (for caching and stuff) is hardcoded with /application/.composer. Maybe for some projects it wuold be good to share one directory or maybe for some reasons someone would like to change its name for specific project.

I think it is configurable right now. Just need to specify environment variable COMPOSER_HOME in docker-compose file, extended Dockerfile or via CLI.
