Environment variables defined in `environment.yml` are not available

Hi @dsroberts

I realised that environment variables like CARTOPY_BACKGROUND_DIR were not available after deploying the Conda environment.
Any idea on the best way to fix this?

Well... there's your problem. mamba-org/mamba#1026. Looks like I'll need to implement this manually.
