[Task] Add documentation for intents-sdk #3
Description
Background
The defuse-sdk has been deprecated, and a new intents-sdk has been created as a replacement located in the new @defuse-protocol/sdk-monorepo. Docs should be updated to reflect this and make mention of this new SDK and when a developer would need to use it.

Acceptance Criteria
- Review existing docs and search for mentions of the old intents-sdk or similar (such as bridge-sdk)
- Replace old content with reference links to the new sdk
- Add documentation for
