[Polymetis] Newer python version?

The documentation specifically defines the virtual environment to be created with python=3.8. My question is whether it is possible to install Polymetis with a higher version of python, and how that would work. Is it enough to modify the environment.yaml? Is there any other pitfalls to be aware of?
