Add a :v2 tag to the images (in line with main immich versioning policy) #667

Firstly, thanks so much for maintaining a monolithic image of immich.
In the latest update to the documentation of the main immich project, there's been an update to the versioning policy which says there is a :v2 tag which will always be the latest 2.x.x version.
Is it possible for the monolithic images to also introduce this tag?
