Update 'Convex.MockChain' to PlutusV4 #299
Description
cardano-ledger and cardano-api already support plutus v4, but plutus-ledger-api does not (at version 1.56.0.0). As a result, some of the functions in Convex.MockChain are partial. We need to revisit this when plutus-ledger-api supports Plutus V4.
