GregTech is broken

GregTech is simply broken for this version of minecraft - and it seems unlikely the devs will be working on the 1.21.1 version anytime soon.

 - [ ] Drop GregTech in favor of different tech mod
 - [ ] Forward-port GregTech 1.20 development to the 1.21 version
