Make the table component more generic

Currently the table component is very tied to the dashboard and cannot be reused freely across the project if needed. The users page needs 2 table components so this needs to be rewritten to be more generic and reusable. Ensure that searching/filtering/sorting still works in the new component as that will be needed to display user info.
