I assume, that OPENNLP-1770 also includes changing it here: https://github.com/apache/opennlp/blob/main/opennlp-docs/src/docbkx/images/opennlp-logo.png ? - most likely, we also need to replace it in the manuals already deployed to the website by updating the post-processing here: https://github.com/apache/opennlp-site/blob/main/pom.xml#L145 ?

Yes, to updating https://github.com/apache/opennlp/blob/main/opennlp-docs/src/docbkx/images/opennlp-logo.png. I'll make a PR for it under OPENNLP-1770.

For the old docs, yes, I think it would be good to get those changed, too - OPENNLP-1786. I'd like to go ahead and merge this to have the logo on the main page.
