feat: cleanup documentation

Description

• Cleanup 404 url mentions across the whole documentation
• Remove "copyright footer text"
• Update twitter icon to X icon
• Update some of the main text explainers that were too redundant or not inline with other explainers
• Update all external URL's to be opened with target _blank
• Update TS applications availability
• Remove non-implemented wallet mentions and protocol mentions
• Update calimero-sdk to proper NPM naming

Standardizes external links to open in new tabs, updates JS SDK/package names and content (Rust or TypeScript, NEAR-only auth), and adjusts site config/theme (repo link, X icon, CSS/JS).

• Docs content updates:
  • Reflect Rust or TypeScript app support; streamline intros/explainers.
  • Restrict wallet/protocol mentions to NEAR; remove unimplemented ones.
  • Update examples/app listings and cleanup outdated sections.
• Link behavior:
  • Add {:target="_blank"} across external links; JS enforces new-tab for repo/social links.
• SDK/package naming:
  • Rename JS SDK/CLI to @calimero-network/calimero-sdk-js and @calimero-network/calimero-cli-js throughout.
  • Point to correct NPM/GitHub resources.
• Site config and theming:
  • mkdocs.yml: repo URL -> org root; Twitter icon → X; social links updated.
  • CSS: header/logo tweaks, mobile drawer styling, hide footer copyright/stat blocks.
  • JS: sidebar auto-hide on desktop when single item; enforce new-tab on repo/social.
• Reference/link fixes:
  • Numerous link corrections to valid targets with target="_blank" and updated paths.
