feat: versioning review

Description

Review doc versioning process.

• Removed canary from the built site (now it is only visible when developing locally)
• Personalised doc banners for non-GA versions
• Improve detection of version type (next, current, canary, LTS...)
• Improve the script for version management

• Docusaurus site code changes
