Fix release and build pipeline

Summary

• Replace Docker-based CI with manual Python 3.11 + ARM toolchain setup (shared via composite action) since the default image uses latest python which fails to build ZSA Firmware
• Update build matrix to target specific Moonlander revisions (reva/revb) for both oryx and klayi keymaps
• Fix typos in keymap configurations (oryx, default)
