Pull Request Overview
This PR updates the Dockerfile to use the standardized PANDOC_DATA_DIR for storing Pandoc templates.
- Replaces the old TEMPLATES_DIR setup with new environment variables (PANDOC_DATA_DIR and PANDOC_TEMPLATES_DIR).
- Updates the symbolic link and wget commands to reference the new directory paths.
